Watermelon, Cucumber, Strawberry and Mint Infused Water

Serves 8

Ingredients:

1 English cucumber, sliced

2 cups watermelon, cubed

8 strawberries, halved

1 bunch mint

3 to 4 cups ice

3 to 4 cups cold water

Place cucumber, strawberry, watermelon, and mint in a glass decanter or pitcher. Add ice and then add water. Refrigerate for at least 4 hours for flavors to blend.

Watermelon-Tomato Gazpacho

Serves 4

Ingredients:

6 cups roughly chopped seedless watermelon, divided

3 cups roughly chopped tomatoes, divided

1 shallot, roughly chopped

2 tablespoons sherry vinegar

1/4 cup roughly chopped cilantro, divided

1 teaspoon salt

1/4 teaspoon black pepper

Put 5 1/2 cups of the watermelon, 2 1/2 cups of the tomatoes, shallots, vinegar, 2 tablespoons of the cilantro, salt and pepper into a blender and puree until smooth. Transfer puree to a fine mesh strainer set over a large bowl and strain puree, pressing as much through as possible; discard solids. Cover and chill for at least 1 hour.

Finely chop remaining 1/2 cup watermelon, 1/2 cup tomatoes and 2 tablespoons cilantro and toss together in a bowl. Pour chilled soup into bowls or glasses and top with watermelon-tomato mixture.

Cantaloup Coconut Lime Freeze

Serves 4

1 cup ripe cantaloupe chunks, frozen

1 cup 365 light coconut milk frozen in ice cube tray

1-2 teaspoons key lime juice

1/4 cup white grape juice

Shredded coconut, for garnish

In a high speed blender, blend all ingredients until smooth. Scoop into your favorite bowl. Garnish with shredded coconut. Cool down on a hit summer day with this sweet treat!

Chocolate Dipped Frozen Bananas*

Serves 6

*Unfortunately, this recipe will not be part of the demonstration on April 9.

6 small sized bananas, or 3 large bananas cut in half

1/2 cup cacao powder

3 tablespoons coconut manna

3 tablespoons honey

1 cup various nuts, for coating

Peel bananas, place wooden skewers or popsicle sticks in bananas and freeze until solid on a cookie sheet. Blend cacao powder, coconut manna and honey in blender until smooth. Add water to achieve the correct consistency. Dip bananas in chocolate and chopped nuts and place back in freezer until ready to serve. Enjoy!
